Comments: 1. Rigatoni pan 1, 180F, pan 2 170F. Salad bar: cucumber 44F, cottage cheese 44F. 2. Discussed need to reach and hold temperatures with staff for TCS foods. Salad bar and soup holding equipment were identified by staff as being unable or marginally able to maintain temperatures. 3. Staff reports concern that single service milk cartons are being delivered dirty and "covered with mud," requiring cleaning. Staff inquired whether this was a health concern. Staff was told that this was not ideal, but that as long as carton integrity was maintained that the food inside would be safe. 4. Discussed ill food worker policy with staff. Current practices appear adequate. Staff reports that staff and student populations have been heavily impacted by current seasonal flu epidemic, with student absences as high as 30 students in a day and general trend of fewer students obsered.

Ice scoop stored on top of dusty lid of ice bin. Should be stored in a clean container. 11B.
