Comments: Chili and broccoli cheese soup were cooling with lids on them. Temperatures at the time of inspection were chili-150F and broccoli cheese-110F. Corrected by uncovering and monitoring temperatures. Within 10 minutes of uncovering both soups dropped by 20F. All three probe thermometers were out of calibration. Corrected by recalibrating in ice water to 32F. Test strips not available for sanitizer. Thermometers not available for several coolers and freezers. Raw hamburger was found on top shelf of cooler, but all food below will be cooked so it was not a violation., however it is recommended to put meat on bottom shelf. Floor in walk in cooler is in disrepair. Grease accumulation on fire suppresssion hoods. Last serviced by Allen Fire in 2011. Ill food worker policy was discussed. Dish machine was checked and temperature good. Hot holding soups: chili was160F and broccoli cheese was 150F.
