Sliced tomatoes in two door beverage cooler located in kitchen had a temperature of 39F. Observed fish for Friday Fish Fry thawing in large make cooler on metal trays with a temperature of 34F. Macaroni and cheese being hot held in large 10 gallon crock pot had a temperature of 145F throughout. Discussed when a delivery arrives all product is to be stored off the floor at least 6 inches above the ground. Observed sanitizer test strips for both quaternary ammonia and chlorine. Hole in ceiling observed from last inspection has been corrected.

Also discussed not cooling macaroni and keeping it warm (at least 140F). Meat sauce for hot dogs, macaroni for macaroni and cheese, nacho cheese sauce typically cooled at facility. Demonstrated calibration of probe thermometer with manager.
