Comments: Comment: Items checked during inspection included accuracy of food probe thermometer, proper cold holding of refrigeration units, availabilty of fully equiped handwashing in food prep area, use of barrier when handling "ready to eat" food, proper concentration of sanitizer for wiping cloths, proper sanitizing by dishwasher, proper food storage and general sanitation. Cafeteria serves for two hours. However, food is placed on hot holding in shifts to accomadate the waves of students coming to cafeteria at various times throughout the lunch period. Menu served on day of inspection included waffles, Baked chicken, sweet potato fries, canned oranges and milk. Hand cloth towels not stored in sanitizer between uses is not proper.

Comments: Comment: No violations observed. Menu served on day of inspection included: Taco with meat sauce, cheese, lettuce, tomato and salsa toppings, pizzza (originally served the day before), corn (frozen), mixed fruit (canned), and milk. Taco toppings are cold held on ice bed. Any toppings leftover after serving are discarded. Serving time goes from 11:00 to 12:45. Items checked during inspection included: accuracy of food probe thermometer, proper hot and cold holding, availability of fully equipped handwash station, availability of sanitizer test strips, proper concentration of sanitizer for wiping cloths and sanitizing by dishwasher and general sanitation. Food workers appeared healthy. Most often, the food items are prepared on the day of service. Occasionally, kitchen staff do prepare large volumes of food (spehgetti meat sauce) which, requires cooling, reheating, and served on another day. Kitchen is equipped with a large walk-in cooler to thaw food items that have been froze. Kitchen manager was experienced in food safety and setting (kitchen) appeared sanitary.
