At 11:15, using calibrated food testing thermometer, chicken nuggets were fiybd ti be at a temp of 130 to 135 dF. In observing the daily temperature log, it was noted that the nuggets were cooked to a temp of 176dF at 10:15 am. Operator removed nugggets from steam table and placed in oven to reheat. Nuggests were reheated to 178dF and placed back in the steam table. CORRECTED. 6a. At 11:20, using calibrated food testing thermometer, Hawaiian pizza temped at 116dF. Operator removed pizza from steam table and reheated to 184dF. Corrected. 2e. Food testing thermometer not used to test potentially hazardous foods. 8c. Plastic silverware found to be stored with the handles facing both ways. |
