Comments: Discussed proper cooling techniques. All hot holding and cold holding temperatures adequate. Ceiling above front counter was missing tiles at time of inspection. Owner stated that the duct work fell out early yesterday morning (around 4am) and it is being replaced and fixed later tonight. Will come back to check on the status of the ceiling to ensure it is fixed. No food service was being done when it fell so no reason to believe that any contamination occurred because of it.

Discussed keeping sandwich cooler lid closed to keep temperature below 45 degrees F, especially with the hot weather. Items were not stored on floor. Discussed keeping less eggs out during prep to ensure they don't reach a dangerous temperature. Discussed cooling procedures and making sure things remained uncovered while cooling and are able to get proper air flow to ensure the cooling is done within the proper time. Also discussed storing raw items below ready to eat items, despite the lack of room in their cooler on delivery days.

A 'soup station' was set up created across from ice cream/sundae prep counter using hot holding kettles; quarry tile walls were installed in the front counter area behind coffee machines, ice cream station, beverage unit and ice machine.
