The three bay sink in the kitchen is used as a hand wash sink when the sink is not used for washing dishes. Prep time in the kitchen usually occurs between 6am and 11:30am. The dishwasher does not start working until 11:30am. There is no dishwasher at the three bay sink from 3pm to 4pm. At that the kitchen may be used for refresh and restocking. There is no room in the kitchen for a hand wash sink, although a separate sink for handwashing would be desired. Two other handwash sinks are available, one in the bakery and one that is central to the Port City counter and the Red Sun prep area. Operator will verify the roast beef is cooled properly by doing a time/temperature chart and will report results. |

Comments: Complaint C17-07-073 states, "Patron dined here for lunch on Monday 7/24/17 and observed many unsanitary issues while worker was handling food. Male worker with dark hair and goatee pushed garbage down with bare hands, then proceeded to start working with raw foods without washing hands or wearing gloves, then scratched his goatee for a few seconds and continued working with food. Only person here wearing gloves was the male worker making the patron's sub sandwich." At the time of inspection, there were no violations involving hand use. All food service workers working with ready to eat foods were wearing gloves. The owner/operator stated the incident may have happened. She has since re-educated all employees on proper use of hands and hand-washing and will continue to do so. | ||
