Comments: Due to the very hot outdoor temperatures, a large number of hot & cold hold food temperatures were measured with a metal stem probe thermocouple thermometer and found to be 140 degrees F or above and 45 degrees F or below respectively. Proper cooling procedures were observed. Thermocouple food probe thermometers are used in this facility. A quaternary ammonia concentrate sanitizer system is in place and measures 50-100 ppm. All good. A choking sign was posted in the kitchen, but not in view of the eating area. The choking sign was relocated. Hand wash stickers were affixed to the two hand wash station paper towel dispensers in the kitchen.
