Item 11A: Manual facilities inadequate, technique incorrect; mechanical facilities not operated in accordance with manufacturer's instructions Item 8A: Food not protected during storage, preparation, display, transportation and service, from potential sources of contamination (e.g., food uncovered, mislabeled, stored on floor, missing or inadequate sneeze guards, food containers double stacked) Item 10B: Non-food contact surfaces and equipment are improperly designed, constructed, installed, maintained (equipment not readily accessible for cleaning, surface not smooth finish) Item 12E: Handwashing facilities inaccessible, improperly located, dirty, in disrepair, improper fixtures, soap, and single service towels or hand drying devices missing Item 8E: Accurate thermometers not available or used to evaluate refrigerated or heated storage temperatures Comments: Discussed the deficiencies with the Chief Chef. Noticed that plastic containers are used to store cold-held items on the sandwich and salad bar lines. These containers are difficult to immerse completely into the ice baths and the thermoplastic material is a poor conductor of cold/heat. This also impeds the ability of the ice bath to effectively cool the TTCS food item and maintain the temperature at 45 degrees F or less. Stainless Steel containers would be more effective in this regard and are recommended for this use. The following temperatures were measured (degrees F): Two 3 pound portions of Pot Roast in the Walk-In Cooler - 45.3, 45.6 and Sliced Tomatoes - 39.4; Sliced Tomatoes on the Sandwich Line - 51.7 (will be discarded before two hours have elapsed), and Diced Eggs on the Salad Bar - 38.7. The Upstairs Walk-In Cooler Air Temperature - 37 degrees F and the Basement Walk-In Cooler - 34 degrees F. Report e-mailed |
