Hot held food items at CO meal area all above 140 degrees.

Comments: Discussed violations with the Corrections officer. Sliced Bologna in the Walk-In Cooler was measured to be 40.3 degrees F and hot held food items, such as, Sloppy joe Mix and Sliced Baked Potatoes, were measured to be at least 150 degrees F. The Fire Suppression System o the Ventilation Hood was inspected in March 2016 and the rinse temperature on the Mechanical Dish Washer was reading 184 to 192 degrees F. The cafeteria operator mentioned that the Domin-Ade powdered drink mix was leaving deposits on the counter and equipment surfaces in the kitchen and workers were complaining that they were inhaling the powder as they worked. She asked if there was something that we could do about this condition since they were told to wear masks to mitigate this condition. Report e-mailed.
