Corrected by removal of said eggs to bottom most shelf of unit and discussion. Numerous sealed packages of smoked salmon filets noted stored in counter area deli refrig unit. Ther mocuple readings of packages were noted at 53 F - 55 F, exceeding the maximum allowed 38 F for all smoked fish products. Corrected by immediate removal of all salmon packages from said unit to counter area reachin freezer unit. Discussed. Front counter area deli refrig unit not cold holding food items at 45 F or less. thermocouple readings of cooked chicken cutlets and cooked roast beef ntoed at 53 F and 51 respectively. Corrected by removal of these hazardous foods to adjoining counter area refrig unit that can maintain 45 F or less. Discussed. Soiled paper lining cabinet interiors under counter area handwash sink. Non shielded lgiht fixtures noted in counter area refrig unit holding cream cheeses and under counter shelving units over preparation area. Food debris noted accumulating on bottom shelf of counter area dairy refrig unit. Rear kitchen floor noted in severe disrepair by bagel oven and cookpot. Rear kitchen ceiling tiles noted with severe grease staining. Rear kitchen screen door noted in disrepair leading into rear hallway.
