Comments: Observed functional digital thermometer. Observed worker portioning raw chicken wings into single service plastic bags at a temperature of 37F. Worker was working in small, manageable quantities and was completed within 10 minutes of removing chicken wings from cold holding. Worker then proceeded to wash hands after portioning and put on a pair of gloves to prevent barehand contact. Observed sliced tomatoes in fourth insert filled below fill line at a temperature of 42F in sandwich make unit across from stainless steel prep table. Sliced American cheese in same make unit had a temperature of 41F. Cubed boneless chicken wings in small commercial refrigeration unit next to make unit had a temperature of 42F. Large food grade bucket filled with raw chicken wings in walk-in cooler had a temperature of 38F. Sliced steak for sandwiches stored in stainless steel insert had a temperature of 38F. All hand wash areas were adequately stocked with warm water, soap, and paper towels. Observed quaternary ammonia tablets and test strips at bar area. Per owner, new drop ceiling will be installed in kitchen the weekend of 2/3/19. Owner has already been in contact with Elmira Heights Code Enforcement officer. Discussed protecting all food and equipment from construction debris, and contacting CCHD when renovations are complete. Violation 15A -bare wooden shelves in walk-in cooler has been corrected, all shelves have been replaced with sealed wooden shelving.

Comments: Observed functioning digital thermometer. Per owner, floor in kitchen which at time of inspection was sealed, will be resealed. Facility is replacing old hood system with new one. Walk-in cooler will be replaced as well. Renovations scheduled to be completed this weekend, during which the facility will be closed, per owner. Sanitarian to conduct field visit to facility 9/4/18 to evaluate renovations. Chicken wings separated into single portion bags had a temperature of 43F, in walk-in cooler. Sliced tomatoes in sandwich make unit had a temperature of 44F. Sliced American cheese in same make unit had a temperature of 43F. All food in make unit were stored below line in plastic inserts. Shredded cheese in large plastic container had a temperature of 42F. Observed sanitizer (quaternary ammonia) test strips located at bar.

Recommended keeping refrigeration at 37-39 F. Also, sanitarian recommended closing the lid of make unit when not actively preparing, because of the close proximity of grill to unit. Time table of correction for all listed violations is set for 1/19/18.
