Comments: A re-inspection will be made after 2 weeks. Food Protection manager is not present/ on site- a second certified person is due to be present by 4/1/19. I spoke with the owner on the telephone, she said that she will be on-site 2 nights this week. Owner also said she has plans to send the Manager and one kitchen staff to the class. Copy of upcoming classes was left at establishment. A food worker was asked what temperature she will cook the chicken to and they answered 140 degrees Fah. Staff was instructed to use thermometer and that the required temperature to be cooked to is 165 degrees Fah. I left 14 pages of a handout in spanish which included a temperature guideline, please have staff read the handout. The certified food protection Manager should be training staff so that they know the proper temperatures. This and the inspection report was reviewed/discussed with owner by telephone. Back storage room smoke detector is chirping; a battery needs to be replaced.
