Comments: Commet: Menu being prepared on day of inspection included: Cows feet and rice. Carrots will be added to the stewed cows feet an hour before serving. All food prepared is served on the day it is cooked. The chicken cited for improper thawing will be placed in marinade and then in the refrigerator over night to be cooked and served the next day. Cook had his food thermometer on his person readily available for use.

Lunch served on day of inspection was corn beef and rice. Cook was in the process of washing and preparing chicken to be served for dinner later in the day.
