Comments: all refrigerators were holding proper temperature. chicken wings were in sink being rinsed upon arrival. the chicken wings temped at 55 deg. the chicken wings rinsed in the morning were placed in the walkin and were temped at 55 degrees as well. this is part of their processing to wash off blood and juices. the operator was informed the limit for processing time is 2 hrs. all chicken wings were placed in a shallow pans and cooled in the freezer until they reached 45. note: some inspection details were lost and had to be recreated on 6/1/2015. inspection was signed on 6/2/2015
