Commercial low temperature dishwasher observed at the required temperature following several washes and 50 ppm disinfectant observed. Discussed better organization of chemicals and mop supplies. Hot holding temperatures of meatballs, chowder, ground beef and stew observed at temperatures ranging from 145-195 degrees fahrenheit. Cold holding temperature of chick peas, chicken pieces and sliced tomatoes stored in deli unit at temperatures ranging from 39-44 degrees fahrenheit. Mechanical commercial low temperature dishwasher operated in accordance with manufacturer instructions; final rinse temperature observed at 124 degrees fahrenheit and chemical sanitizer present. Discussed enclosing rear exterior storage area. (Facility to close January 1-February 28 for maintenance and cleaning.)
