Only desserts under preparation atoi. All other foods prepared earlier (at Bernie's) and stored in walk-ins (both in this kitchen and in Bernie's kitchen). Cocktail hour and ordives will begin at 5:30, followed by dinner at 6:30 (for 300 + people). All foods (for dinner) will be cooked and served within approximately an hour and a half, and any leftovers will be discarded. Observed buffet area, where dinner foods will be hot-held in chaffing trays over sterno heat (at a minimum of 140 dF). |
