Discussed cooling potentially hazardous food items on the Salad Bar and the manager decided that it would be best if all potentially hazardous food items were placed in ice and then on the cooling plates, so that these items will be maintained at 45 degrees F or lower. The Fire Suppression System on the Ventilation Hood was inspected in August 2015. The chlorine residual in the Drinking Water System measured at the Kitchen Hand Washing Sink was 0.8 ppm. The following food temperatures were measured (degrees F): Serving Line - Taco Meat - 157.3, cream of Potato soup - 155.1, Corn - 152.1; Salad Bar - Sliced Grape Tomatoes - 54.4, Cottage Cheese - 46.5; Reach_In Cooler - Chicken Salad - 47.5. All refrigeration units had thermometers inside the units and the Dish Washer Final Rinse Temp was 189 degrees F. The sliced tomatoes will be discarded after lunch is served, which would be after two hours. Report e-mailed.
