Item 12E: Handwashing facilities inaccessible, improperly located, dirty, in disrepair, improper fixtures, soap, and single service towels or hand drying devices missing Item 8E: Accurate thermometers not available or used to evaluate refrigerated or heated storage temperatures Comments: Comment: Menu item served was a bean salad which comprisd of beans, scallions onion, parsley and applecider vinegar. The produce is chopped and mixed on one day and portioned in disposable cups the next day limiting time of preparation at room temperature. Eight servings are placed on ice packet for consumption by the public. According to food handler there is relatively quick turn around. When temperature of salad on display was checked it measured 41F at the bottom of the cup and 46F at the upper portion of the cup serving. It was suggested that a dish with sides be used to fold up the ice packet to increase the surface area of cold. Food handle hand a utensil in the cooler to portion additional servings. Food service operation was set up by the rest room for handwashing. However, it was the Men's Rest Room. A temporary Handwash station should be set up. |
