Comments: All hot and cold hold food temperatures measured with a metal stem food probe thermometer are 140 degrees F or above, and 45 degrees F or below respectively. Proper cooling of chicken breasts and boneless breaded chicken tenders was observed. Good glove use was observed. The pizza log for the twenty items in the service case was reviewed, and found up to date and complete. This log is one of the best methods that I have seen. TPHC, Time as a Public Health Control was explained, offered and discussed with the owner, and Paul is very interested in applying. I will drop off a TPHC packet as soon as we have it available. ALL cited violations from the last inspection on 2/10/15 two years ago have been corrected, thank you.
