All salads such as macaroni and potato salad shall be made with prechilled ingredients which have been properly cooled to below 45F and held below 45F before mixing. Cooling violations have been observed during this and the 2016 feeding program inspections. Multiple critical violations were observed during the previous 2017 inspection. It was learned Feeding Program prohibits any food handling at the feedingsite. In light of this HACPP discipline, discussed monitoring cooling process of large volume of cooked hamburger with cook using accurate food probe thermometer. Subject hamburger was to be used for tacos to be served the next day. |
