Comments: At 10:20 am, strips of chicken cutlet in the pre-portioned chicken Caesar salads stored on an ice bed along the hot/cold service line, temped between 64 and 68 degrees F. Interview with a female employee who is working this section of the line indicates that the chicken cutlets are a commercially prepared product that arrives fully cooked in the frozen state. She states this food was properly reheated in the oven at 8:30am, taken out, and immediately put in the walk-in freezer in the basement until 9:30 am (ambient temperature 10 degrees F), at which point they were sliced to be used for the salads. Inspector allowed service of this food because it had cooled below 70 degrees F in less that two hours and is not going to be saved after the lunch service, which ends approximately 11:15 am. Any leftover salads will be discarded at this point.
