Item 11B: Wiping cloths dirty, not stored properly in sanitizing solutions Comments: Comment: Items checked during inspection include: Accuracy of food probe thermometers (operator acquired two digital food probe thermometers), checked for proper cold holding, proper sanitizer concentration for wiping cloths and heat sanitizing of dishwasher, proper food storage and general sanitation. Facility appeared very clean. Also, discussed cooling process of Hamburger Soup. Inspector encouraged cook to monitor cooling process with thermometer and keep track of time it takes to cool from 120F to 70 (2hrs.) and 70F to 45F (4hrs.). |

Item 2C (Critical): Cooked or prepared foods are subject to cross-contamination from raw foods. Comments: Comment: Facility is clean and well maintained. Clhorine residual at hand wash sink adjacent to mop sink measured 1.5mg/l. No hot holding of food was present during inspection. It was learned from cook there is very little cooling involved with menu items served. When soup is made, the total volume is about a gallon. The soup is cooled and cold held. Individual portions are reheated to order. Occationally on weekends, soup will be reheated on stove and hot held in crock pot. Any soup leftover in crock at the end of the day is discarded. |
