Comments: Time as a Public Health Control waiver application, pizza and garlic knots stored in display case, discussed and completed with operator during inspection. Discussed dishwashing method with operator and kitchen staff in that dishes (including pots, pans, utensils, equipment components) are washed, rinsed, and then sanitized in properly filled basins of three basin sink. Observed that all cleaning chemicals were properly stored in designated storage area away from food preparation areas. Customer restroom properly equipped with soap, paper towels, self-closing door. Kitchen hand-wash station properly maintained and equipped with soap and paper towels. Product thermometer readily available and observed to be used. Pizza prep cooler open-top section – pizza sauce 38F. Hot-holding/steam table: marinara sauce 155F, meatballs 173. Note: Discussed that restroom, within side room under renovation, must be equipped with a self-closing door prior to use.
