Cooked salt potatoes found with not maintaining 140F told operator to reheat to 165F and maintain @ 140F or discard this food item! Need to stop overloading the Hamilton Beach roaster unit where food temperatures are stratified; must maintain 140F for entire food item. Refrigerator door does not close or stay closed must maintain 45F or below as found thermometer reading 51F, told operator to move coleslaw food in order to maintain @ 45F or below.
