Items checked out during inspection included Verifying accuracy of digital food probe thermometer, proper concentration of sanitizer, availability of fully equipped handwash station, proper sanitizing by dishwasher, proper hot and cold holding and general sanitation. A new sneeze guard had been installed on the hallway serving line. However, it did appear to be positioned for taller students. Shorter kids could have direct respiratory influence on food that is not covered on serving line. Discussed monitoring turkey roast that was cooling in walk-in cooler, with food probe thermometer. Kitchen manager stated if cooling rate is not sufficient, she would move it to the walk- freezer. | ||

Discussed prep of michigan sauce with kitchen manager. There is additional michigan sauce prepared that will be served on another day. This requires cooling. The cooling process involved placing the michigan sauce into a 9" x13" stainless steel shallow pan at a 2 1/2" depth. Then placing the uncovered pan into the walk-in freezer, with periodic stirring. The temperature of the michigan sauce at 11:15 was 174F. At 12:15 the temperature was around 120F. Kitchen manager stated it is usually below 45F by 2:30 when she goes home. At that time she will cover up the michigan sauce with foil. |
