Comments: Re-inspection to verify proper temperature in sandwich unit. Per discussion with Jeff, sandwich unit was adjusted to a lower temperature setting and is now achieving and maintaining 45F or less. Raw beef patties stored overnight in bottom of unit measure 38F. Sliced tomatoes stored overnight in top of unit measure 38F. Unit appears to be functioning properly. Regarding cooling of TCS items, Jeff states that items are being cooled in shallow containers and roasts are being quartered prior to being placed in walk-in cooler to facilitate rapid cooling.
