Discussed the need to confirm the adequate rinse temp of the dishwasher prior to ware washing. Discussed planned sales, change of owner operator to occur in two weeks. Restrooms adequately maintained clean and sanitary.

No cooking at time of inspection. Discussed schedule and process for cleaning the ice machines. The ceiling and walls of the walk-in cooler have recently cleaned. Discussed cleaning opportunities for cleaning the shelving units in the walk-in. Hair restraints and hand barriers utilized. Digital stem thermometer used. Sanitizer available and used. Discussed the non-use of the basement for any food service storage.

Digital thermometer available and utilized. Hair restraints and hand barriers used. Bleach bucket used. Discussed seasonal maintenance, plan to address the walk-in ceiling, and continued maintenance and monitoring of the ice machine at the bar. Bar ice machine has been recently cleaned and sanitized.

Discussed with Dan: 1- cooking, reheating, and cooling temperatures and procedures. 2- cleaning schedule and techniques for the two ice machines. 3- Installing an additional thermometer inside the walk-in refrigerator. The light fixture at the walk-in freezer has been disconnected and bulbs removed. Restrooms adequately maintained. Hand barriers and hair restraints utilized. Sanitizer buckets available. Basement toured, previous issues appear to be addressed, and as per discussion with Gary (manager).
