It was determined that they were out of temp for less than 2 hours, so they were allowed to reheat the meat to 165oF and re-hothold at 140oF. 8A: Sample tray of pita chips and humoos were found uncovered on the front counter (meant for taste-testing. There were spoons for spreading dips on chips.) A clear dome meant to act as a sneeze guard was produced and used. 2 bags of rice were found in the rear kitchen area stored on the floor. 8D: Single-serve takeout containers were found stored on shelves under front counter without protective sleeve around them. 9C: One of the cook's was not wearing a hair restraint. 10B: Lid and gasket of small chest freezer found in disrepair in rear kitchen area.
