Comments: Discussed the deficiencies with the operator. A tray of egg salad and ham sandwiches were temped at 9:42 AM and found to be between 51 and 54 degrees F. Discussed this matter with the operator and she said that these items were placed in the cooler about 5 minutes previously. They were made from food items removed from the Walk-In Cooler (except for the bread) and will either be consumed within two hours or discarded after that time. The following food temperatures were measured (degrees F): On the Serving Line - First Tray of Chicken and Gravy - 194.4, Second Tray of Chicken and Gravy - 193.6, and Tray of Cooked Peas - 201.8. Bowl of Tuna Salad in Reach-In Cooler - 47.8 degrees F. The Rinse Temperature on the Dish Washer was 174 degrees F. Report e-mailed.

Also discussed with another operator about their cold holding of tomatoes at 51 to 53 degrees F. and 60 to 61 degrees F. The operator stated that the tomatoes are going to. e discarded when two hours have passed. I watched them discard these tomatoes in the trash after the two hours had ended. Report emailed.
