Comments: Temperatures adequate throughout: sauerkraut 40 degrees, ham in walk in temped at 43 degrees, mac salad temped in display cooler at 44 degrees. Discussed with owner proper way to cold hold cheese at grill. Discussed addition to building with owner. He states that he is building more storage space, particularly for packaging and packaging materials. Plans need to be submitted to NYS Dept. of Health office asap, as construction is well underway. Owner needs follow up by DOH for what is necessary to complete plans.

Comments: Discussed deficiencies with the owner. We also talked about the storage of personal items and setting aside a place for employees to eat. The refrigeration units had thermometers inside them for measuring the temperature except where noted. The following temperatures were recorded (degrees F): Display Cooler - Potato Salad - 37.9, Tuna Salad - 41.1, Seafood Salad - 40.1, Ham - 39.2; Cream Cheese Station - Cream Cheeses were measured to be between 47.4 to 51.0; Sandwich Bain Marie Upper Compartment - Sliced Tomatoes - 45.5, Sliced Turkey - 46.5 to 48.8, Sliced Roast Beef - 47.7, Sliced Ham - 46.5 to 49.2. Discussed the temperatures found for the foods in the Sandwich and Cream Cheese Bain Marie with the owner. The temperatures were highest for the items stacked high in the containers. These items resided in both Bain Marie Units for no more than 30 minutes according to the owner. Recommended that they keep the height of items in these Bain Marie units one inch below the top of the containers so that the cooling air can come into contact with all of the food in these containers.
