Comments: No violations were observed. The mechanical dishwasher (right side) was being used and the sanitizing cycle was being used. All food temperatures measured were acceptable. Examples include: Michigan Sauce = 40° F, ham = 40° F, macaroni salad = 43° F, cooked potatoes = 34° F. The basement has been cleaned up and is well organized. Discussed being aware of food temperatures when food is removed from a refrigerator to prepare an order. If food warms up above 45° F, do not cover it tightly when it is placed back into a refrigerator. Place it uncovered or vented to cool it back down or place it in the freezer for a few minutes.

Comments: All hot and cold holding temperatures were acceptable. Discussed cooling of gravy and potato salad and completed cooling curves. The facility recently purchased a second residential style sanitizing dishwasher. Both on-site dishwashers are residential style and must be run using the sanitizing cycle. This type of dishwasher has exceedingly long run times and may not be acceptable for a food service establishment serving the volume of food that is served on-site. Thermometers were calibrated on-site and found to be accurate. A deep fryer unit was observed on the counter in the kitchen. A fire suppression system was not observed. Please contact code enforcement to determine if fire suppression system is required for this unit.

Comments: The ceiling tiles were recently replaced with non vinyl faced drop ceiling tiles that are textured and absorbent. Once the tiles become soiled or discolored they must be replaced with the appropriate tiles that can be properly cleaned. Cooling and reheating of soups and potatoes used for home fries was discussed. Recommend installing a mop sink below the counter by the dishwashers.

Comments: operator is scheduled to attend serv safe class in April. Hot and cold holding temperatures were adequate. Cooling process for whole potatoes used for home fries was reviewed. There is no indirect drain on the 3 bay sink and no food prep sink. If Fresh produce is going to be washed in the 3 bay, You must install an air gap.
