Comments: All food temperatures measured were acceptable. Examples include: cottage cheese = 40° F, cooked pasta = 41° F, milk = 44° F, tomato soup = 191° F. Reviewed cooling logs which were acceptable. Discussed cooling procedures used and proper cooling methods. Remember to start the active cooling process before or when the food reaches 120° F. Processed vegetables obtained from the Hub on the Hill must be labeled with the name of the facility that they were obtained from. We will follow-up with the Hub on the Hill concerning this issue. Discussed the possibility of the Health Dept. providing training to the cafeteria staff.

Comments: A cart used for grab and go breakfast sandwiches (some containing egg and some with cream cheese) was observed outside the lunch room. Per interview, the sandwiches are prepped and placed on the cart for a 10-15 minute timeframe when kids grab and go for breakfast. If temperatures for hot holding (140 °F) or cold holding (45 °F) cannot be maintained for Time temperature controlled foods it is recommended that you apply for Time as a Public Health Control (TPHC). This was discussed for hot and cold potentially hazardous food on the serving linear well. Additional information will be provided if you wish to use TPHC.

TPHC were reviewed and are being properly completed and currently discarded and not retained. please retain these documents and have them available for the DOH inspector upon request. thermometers are all calibrated and the dishwasher sanitizer concentration is working properly. New food service manager is slated to take over next year.
