Comments: Fish fry and chicken wings on Fridays through lent. Wings, fried food and cheese steak served on most other Fridays. Steak dinners in summer on Friday. On-site thermometer was accurate when calibrated against DOH thermocouple. Please label sinks as to their intended use (wash, rinse sanitizer, food prep and handwash - three bay and mop sink at single bay).

Comments: The thermometers were calibrated on site and found to be accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. Chicken wing night where wings were baked and placed on a shallow sheetpan and placed int he walkin to cool prior to being deep fried per order.

Comments: The bar walk-in cooler renovation is near completion.The floor is poured concrete which needs sealing. The walls are renovated with material that makes it smooth and easily cleanable. The ceiling renovation is close to completion with all mold and mildew removed. The ceiling's foil exterior needs to be covered with a material that is smooth and easily cleanable. A shelf needs to be built to elevate all food/drink items stored in this walk-in at least 6 inches off the ground. Please send pictures to DOH office when renovation is complete. Interview with operator indicated that estimated time of completion is approximately two weeks. All food temps, as taken with DOH Thermepen were in the acceptable range.
