Comments: Cold holding temps Tomatoes 38 degrees F. chicken wings 40 degrees F. Commercial Soup found heating up in a hot holding unit(temped at 145 degrees F). The soup was temped at 95 degrees F and it was determined that the soup would reach temp within the 2 hour limit. The operator was educated on increasing the temp on the hot holding unit to ensure reaching temp in time. The operator stated she usually heats up the soup in the pizza oven and she placed the soup in the oven to heat up to required temp immediately. Operator was educated that the best possible way to heat up the soup would be in the pizza oven to reach required temp and then place in hot holding unit.
