The three bay sink will be acceptable for food preparation and hand-washing provided that: 1) The sink is accessible for hand-washing and hand soap/paper towels are provided, 2) The sink is washed, rinsed, and sanitized prior to food preparation and anytime that contamination occurs, 3) The three bay sink is not being used for dishwashing when being used for food preparation. 4) The only bay that may be used for food preparation must be the bay that has the air gap/indirect drain. The installation of a dedicated food prep sink is strongly recommended, and may be required if the above conditions are not met. |
