Discussed the importance of cold holding prepared batter (or using Time as a Public Health Control). All hot and cold holding adequate. Discussed holding fish fry batter using time as a public health control (fresh batches of batter are made for lunch service and dinner service). Discussed labeling batter with a discard time not to exceed 4 hours. Good glove use observed during the inspection.
