Comments: Talked with the operator about cooling it looks as though all cooling practices are sufficient cooling relatively flat brisket in a shallow pan uncovered in an ice bath. I left a cooling sheet with operator that can be used if bigger pieces of meat are being cooled. Pork butts 6 to 8 lbs are being pulled out of the smoker set on counter until they can handle them and then torn apart and cooled uncovered over night. I have a menu. question on Homemade BBQ and honey cinnomin butter.

Comments: a few jars of cold jarred pickles, not sealed to exclude air were located in the walkin cooler. informed her she could make her own pickles, but could not seal the jars. despite a few violations, facility is clean and well organized. six drawer cooler unit still out of service in the kitchen. keg cooler in basement also out of service. two drawer cooler in upstairs storage area not in use at this time. two chest freezers outside are not locked, would recommend possibly securing them to avoid tampering.
