Comments: Ice build-up on ceiling of walk-on freezer has improved. Ceiling still has some small droplets of ice, but area around the condenser no longer has a large build-up of ice around it. No contamination of food observed at time of inspection. Advised operator to continue working to keep ceiling free of ice so as to avoid possible contamination of food. Freezer gaskets have been repaired and door was repaired so that it would close tightly.

At the end of the 30-minute period, any leftover product is discarded. Discussed with operator procedure for following state-wide waiver on items including sliced tomatoes, shredded cheese and sliced cheese.

Operator currently working on the cove molding behind the dish machine and the dish machine. Currently using sanitizer (chlorine) in the dish-machine, it can be used as high temp or sanitizing.
