All chicken product temperatures are within proper initial cook temperatures and are appropriately logged and documented for the day in questions and all other calendar days. Comments: tomatoes found at a temperature of 67 degrees Farienheight. Change over was marked to be at 11 am and I was told they came from the refridgerator. Tomatoes did not look fresh. Operator threw them away and pulled new sliced tomatoes from the cooler. She also marked the time keeper for two hours for refresh. at the time of inspection the automatic dishwasher did not reach 180. The dishwasher was out of soap and sanitizer and there was no extra on the site. Manager had the team open and use the three bay sink for until the dishwasher was back up. water pressure in three bay sink area was low. Operator said she would ask the manager to look into it.
