A Time Table Of Compliance Date of October 13, 2017 has been established to correct the violations listed above. A re-inspection will be conducted on or after this date to determine compliance.

Comments: Observed thermometers in all refrigeration units containing potentially hazardous foods (PHF/TCS). Observed chicken wings in home style refrigeration unit at 43F. Observed accurate probe thermometer. Observed adequate levels of bleach sanitizer (~100ppm) in sanitizing bay of three bay sink using facility's test strips. Discussed checking and replacing sanitizing solution as it becomes littered with food debris.

Discussed with owner by phone on 6/9/14 that facility will no longer cool meat sauce.

Discussed storing raw frozen hamburger patties in freezer in kitchen. Discussed process for making meat sauce. Discussed avoiding barehand contact with ready-to-eat foods, including lemons/limes used to garnish drinks. Discussed handwashing and ill worker policy with operator. TTOC for above items, except walk-in refrigerator walls, is 6/3/14. Call CCHD (737-2019) to establish TTOC for walk-in refrigerator walls.
