Comments: Cafeteria is still understaffed since fall 2018 inspection. Called Monticello District Office and discussed circumstances with direct supervisor regarding cooling pasta (see 8A). Hot-holding temperatures for steam table: taco meat 155F, rice and beans 167F, vegetable soup 160F. Shredded cheese for taco meat (separate pan on ice) 42F. Shredded lettuce for taco meat (separate pan on ice) 43F. Temperature logs for all cooling units up-to-date. Dishwasher rinse temperature measured 190F. Product thermometers and (chlorine) test strips for sanitizing solution easily accessible on-site. Observed proper glove use and hair restraints. Kitchen observed to be kept very neat and well-maintained.

Kitchen manager stated that 4 staff members quit 1 week prior to start of school year, forcing remaining staff to juggle between both Sullivan West campuses. Product thermometers and (chlorine) test strips for sanitizing solution available on-site. Sanitizing solution for wiping cloths measured to be 100-200ppm. Kitchen observed to be kept very neat and well-maintained despite circumstances.

High temperature dishwasher rinse measured at 184F. Free chlorine residual measured at 1.0ppm. Cafeteria is understaffed, only three cafeteria workers on duty.

Hot holding had Stromboli at 145 degrees and tomato sauce at 145 degrees F. Milk at 34 degrees and cold held sandwiches were on metal tray with frost. Front reach in at 39 degrees F. Kitchen very clean and well maintained. No food products stored on floor. All food items properly covered during storage.

Cold-holding: yogurt parfait 30 dF, ham sandwich 45 dF. Chlorine residual for water supply measured to be 0.3 ppm at food prep sink near food service line. One deep groove still observed on wooden food prep counter for sandwiches, however, according to food worker and kitchen manager, foods are not placed directly on counter. Sandwiches are prepared on cutting boards (on top of counter), which were observed to be in good condition - ok. Observed dishwasher operating properly (temperature reached 190 dF during rinse cycle) - ok. Observed that bus pan (approximately four inches in depth) of leftover, prepared grill ham & cheese sandwiches were properly placed in walk-in cooler to cool (uncovered) - ok.

Observed 5 whole ham roasts cooling in bus pan (approximately 7-9 lbs each). Tempted at 165 degrees F. Cook, Bonnie, will cut each roast in half, place on sheet pans, and place in refrigerator once internal temperature of roasts registers 140 degrees F. Water surveillance sample collected ATOI, chlorine residual of 0.3 mg/L obtained. Sewage system is entirely municipal (no pump stations either), as per water operator Steve Lewis.
