Witnessed cooling procedures on roasts -- 107°F in the cooler for ~30 minutes at time of temp. (120°F -- 70°F in 2 hours then to <= 45°F in an additional 4 hours) Witnessed roasts cooking in the alto-sham -- 135 °F while still in the cooking process Cold holds are all < 45°F. Thermometers are in place. Sanitizer is quat at ~ 200ppm. 3-bay sink is wash, rinse, sanitize, air dry. Mop sink has back flow device. Food rinse sink is indirectly draining. Hand wash station ok other then the paper towels missing. Hair is restrained, hand barriers are used. Choking poster, cpr kit, and permit are all in public view. Restroom is ok. Truck is inspected on event sites.
