As precaution, owner, Jackie Fosco, moved all food items that require refrigeration to a properly functioning cooler prior to the end of the inspection. Do not place foods that require refrigeration in this cooler until it is service and capable of cold holding all foods at or below 45°F at all times. 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

Breaking down large items, shallow panning, ice water baths all acceptable means to cool potentially hazardous items. Suggest adjusting temperature on main deli cooler, as it is running around 44*F.
