Hot holding gravies, soups, and quiches, observed at adequate proper temps; 145-191F. Cold holding prep unit items observed at proper temps; 49-45F. Discussed that sliced tomatoes and lettuce is now considered a TCS food, and dealing with the repeated freeze-thaw issues of the rear reach-in freezer. All baked good were observed to be adequately protected, "dome" covers used. The interior of the sliding door refrigerator has been painted. Discussed the routine and cleaning regime for all refrigeration units. Hair restraints and hand barriers are worn throughout. |
