Comments: New Great Wall, inspection conducted Tuesday during lunch. Discussed with owner/operator; a customer reported to our office that everytime her child eats fried chicken from this establishment they suffer from nausea and diarrhea later at night. The restaurant offers: a floured deep fried chicken wing(4), general Tsao, and sweet and sour chicken. All cold holding chicken observed adequate. Observed and discussed the chicken process throughout. Discussed with owner; better protection and covering of stored ingredients, and the importance of hand washing and hand barriers (no issues observed). Improved overall cleanliness was observed at/along the cookline equipment and perimeter wall, and the interior of the walk-in cooler. The hood was observed to be adequately clean and free of grease; the hood is scheduled to be professionally cleaned on 12/10/18.

Comments: New Great Wall, re-inspection conducted Friday afternoon. Significant improvement in cleanliness and maintenance was observed by this inspector. Raw shrimp was being prepped, again, at time of inspection, and observed at adequate temperature for time of peeling and de-veining, 57F. Uninterupted shrimp preparation, 5 lbs, is usually completed within 1-hour. Chicken prep bowl found clean. The door seals of the refrigerators and freezer and its interior paneling have been cleaned, and duct taped. Discussed with owner, the beneefits of removing and replaing the door seals/gaskets. Thermometers installed throughout all coolers. Significant improvement in cleanliness observed inside the walk-in refrigerator; the shelves, the walls , and the floor have been cleaned and adequately maintained, as of last visit. Discussed and observed the daily cooking and cooling procedures for noodles; temperatures observed adequate, discussed the cooling curve temps. Cold holding items observed in the prep cooler, 38-40F.

Discussed complaint with owner/operator; the owners were not aware of the incident or the complaint. Hot holding rice found at 194F. Chicken stock cook temp observed, 166F. Cold holding deli unit temperatures adequate, noodles 39F, and raw chicken and beef 40F. Discussed with owners, the repeat failed inspections, and resulting pending office conference.

Improved cleanliness of storage shelves observed and cardboard lining has been replaced with laminate. Cleanliness of can opener is improved; discussed key components of can opener. Improved cleanliness of grill surface and hot holding surface observed. Improved cleanliness of rear food preparation table observed. Improved organization of chest freezers observed. Observed improved cleanliness of floors and walls; discussed hard to reach / hard to clean areas. Ventilation hood clean and professionally serviced (11/27/17). Hot holding temperature of fried rice and white rice observed at temperatures ranging from 173-177 degrees Fahrenheit. Cold holding temperature of food items including but not limited to chicken and beef observed at temperatures ranging from 40-41 degrees Fahrenheit.
