| Comments: No violations observed. Observed functioning digital thermometer. Milk containers cold held in aluminum pan surrounded in ice had a temperature of 43F. Cheese sticks in aluminum pan covered in ice had a temperaure of 42F. Tuna casserole in aluminum pan placed in aluminum pan filled with ice, level with food had a temperature of 41F-44F. Discussed monitoring temperature of food during service to eliminate possibility of potentially hazardous foods being held greater than 45F or less than 140F. Observed up-to-date temperature log, which staff have used to document delivery temperatures only. Per site supervisor, when food arrives to facility it is placed in oven to hot hold or placed in freezer to cold hold and food is served within 30 minutes. No other potentially hazardous time/temperature controlled for safety foods were available to evaluate during inspection. | ||

| Comments: Accurate temperature log was presented to sanitarian. Sanitization solution was made with sanitarian with correct dilution of bleach. Cheese served with tacos was held at a temperature of 38 F. Taco meat arrived at facility at 199 F which was then placed into oven for hot holding until service. Sanitarian observed accurate digital thermometer which workers used to evaluate the temperatures of all foods being served. | ||
