Comments: A Time Table of Compliance Date of March 15, 2019 has been established to correct the violations listed above. A re-inspection will be conducted after this date to determine compliance. Kitchen employees were observed conducting food preparation of cold vegetables including diced tomatoes using plastic gloves and proper utensils during inspection. Diced tomatoes were returned to cold sandwich unit after prepping by staff, storage unit was operating at 37 dF. No hot potentially hazardous (TCS) foods were evaluated during inspection. Both digital and numerical thermometers were available for evaluating cooked potentially hazardous (TCS) foods. Quaternary Ammonia test kit available for evaluating dish ware washing and dish machine sanitizer. Also discussed routine hand washing by kitchen staff with Manager during inspection.

Comments: Inspection of catering operation conducted at Wisner Market. No violations observed during time of inspection. Observed hold holding cambro containing previously cooked ribs at 154F and macaroni and cheese at 141F. Observed cooler with ice cold holding macaroni salad at 34F and another cooler with ice cold holding raw fish for fish fry's at a temperature of 32F. Observed temporary hand washing station with continuously flowing warm water, soap, paper towels, and a waste water bucket under the spigot. Observed workers using gloves and tongs to prevent barehand contact of ready to eat foods. Observed functioning digital thermometer.
