Item 8A: Food not protected during storage, preparation, display, transportation and service, from potential sources of contamination (e.g., food uncovered, mislabeled, stored on floor, missing or inadequate sneeze guards, food containers double stacked) Comments: Comment: Facility had finished up serving food and the cook had cleaned up and had pulled soup and chilli from hot holding in the crock pots. The food items were still quite hot but, it provided and opportunity to discuss monitoring the cooling process and take action once the temperature drops to 120F, keeping the product depth to less than 4" and leaving the lid off until it cools below 45F. Inspector also discussed last years inspection with the operator and the cook and the temperature related violations. Items checked during this inspection included: accuracy of food probe thermometer, discussed proper hot and cold holding, availability of handwashing in food prep area, availability of gloves for handling "ready to eat", proper concentration of sanitizer for wiping cloths, washing of dishes involves use of the three-bay sink, proper food storage and general sanitation. Operator had acquired a Vacuum Packer. Inspector informed the oprerator that using vacuum packer does require submission of a "scheduled process" to the Health Department for review and approval to be in compliance. Inspector will send the operator the required forms. |
