| Comments: Re-inspection of the New China Buffet, conducted Tuesday afternoon. All violations noted during the previous inspection have been addressed. All cold holding and hot holding temperatures on the buffet line were observed to be at adequate proper temps, greater than 140F, or less than 45F. The desserts were found protected under hinged covers. Significant improvement in overall cleanliness of the kitchen equipment, floors, and walls were observed by this inspector. Attempts were made to fix the lid of the trunk freezer using duct tap for the interior housing, and new hinges were installed. The area around and behind the cookline and grease trap has received a deep cleaning; no accumulated grease and grim at time of inspection. Discussed with owner/operators that the interior of the walk-in freezer is so packed with food product that this inspector was not able to view the floor. Satisfactory Re-inspection. | ||
